If you saw my video over on TikTok about this banana bread, you would know how I feel about banana bread tok. Everyone’s got the best banana bread recipe, everyone claims their recipe is the best you’ll ever try. There’s something suspicious in the air.


I mean, how could everrryoonneee have the best banana bread recipe? And if you don’t believe me, just search banana bread on TikTok and tell me every other video doesn’t include some form of “here’s how to make the best banana bread you’ve ever had”.
A lot of comments on my video said this is probably because banana bread is just naturally delicious and so hard to f up, that everyone’s just ends up being great. But I must disagree. I’ve had some pretty mid - even below mid banana bread’s in my time.
So anyway, that’s just the rabbit hole I went down trying to create a recipe for what I was craving - a chocolatey, tahiny, crackly, and decadent slice of banana bread. And what we got is a good slice of banana bread. Is it the best you’ll ever have, idk!!! but look at it!!!!
not not the best banana bread:
1 1/4 cups all purpose flour
1 teaspoon baking soda
1/3 cup tahini
1 teaspoon salt
2 eggs, room temperature
3 ripe af medium bananas
1/2 cup unsalted butter, melted
3/4 brown sugar
1/4 cup maple syrup
1/3 cup full fat greek yogurt
1 tsp vanilla bean paste (or extract)
mash your bananas in a bowl. add your butter, sugar, salt, maple syrup and mix again until fully combined.
add your vanilla, tahini, eggs and mix again until combined. fold in your yogurt or sour cream.
gently mix in your flour + baking soda. separate 1/2 your mixture in a separate bowl.
chocolate swirl:
3 heaping tbsp cocoa powder
3 tbsp tahini
1/2 cup chocolate chips
melt your chocolate chips. add your tahini + cocoa powder and mix until smooth.
add the 1/2 of your batter mixture you set aside to the chocolate mixture. gently mix to incorporate everything.


assembly:
add 3-4 1/2 cup dollops of the white batter on the bottom, followed by 3-4 dollops of the chocolate on top. then continue to alternate with the 2 batters until you’re all out.
with a chopstick or knife, gently swirl through the batter. not toooo much to mix them fully together.
sprinkle with sesame seeds on top + granulated sugar across the entire surface for a crackley crunchy top.
bake at 350 F FOR ABOUT 50-55 min. check the center with a toothpick to make sure it comes out clean!

my matcha lattes I recently got into it. best coconut milk: silk. add a bit of honey with the matcha to melt. it’s just the best, fresh, light, flavorful, amazing combo. please make it!!!!!
