I just made this for my husband and I, and it is delicious! I’m an avid pickle lover, and even I was hesitant to try pickle soup. But the main flavor that shines through is the dill, and the saltiness from the brine. I loved it!

I just have to say I was really impressed with this recipe - Shocked at how the veggies, barley and meatballs all had the perfect bite yet variable cooking times and what not! It’s been a real hit in our house this week.

The only thing I did different was sub heavy cream for milk because I didn’t have any milk handy. Meatballs were still delightful.

No worries! You can also try farro or bulgur. If not literally just omit, you can add another potato or 2 if you like ;)

Fabulous! I'm here for the pearl barley love especially - this time of year, I feature it in so many soups and stews and I am obsessed with its nutty bite. So cheap here in the UK too which is also a bonus!
