One of the most heartbreaking parts of the warmer weather coming up is me not having a grill (or any outdoor space for that matter) because nothing is easier + better than throwing some stuff on the baaarby and calling it dinner.
No wiping down the stove top, minimal dishes, super quick and the absolute trip to flavortown everytime. Not to mention, grilling is a strong manly man’s duty so the dinner responsibility entirely shifted to my boyfriend for 6 months while I sipped on spritzes and made pretty little salads </3
Ugh. If you have a grill, don’t take this time for granted. In fact, invite me over for a BBQ, I’m a great guest, I’ll bring some previously mentioned spritzes + salads.
Kafta is one of my favorite recipes to make during the summer (and on the grill) but the good news is, they come out insane on the stovetop or oven too, so don’t be sad.
AND the star of this recipe is this hack I recently learned from David Kuo on TikTok. You dissolve gelatin in chicken stock and grate it into your meatball mixture before cooking them. When they melt while cooking, they create these pockets of juice that result in the most insanely juicy kaftas or meatballs.
