There is arguably no better place to go during the fall (other than probably central park) than upstate NY. While I spend my June birthday in the Catskills every year, I always need a second trip during the fall because it’s just a whole different vibe.
Last month I went away for a 4 day lil trip with my boyfriend and it was literally the best time ever. It’s just the perfect combination of fun, restoring, good food, and cozy weather.
One of the restaurants we ate at, Cafe Mutton, served the best omelette I think I’ve ever had. It was a shishito pepper french style omelette. Soft but not creepily runny on the inside, deliciously savory and paired perfectly with a stack of generously buttered bread. Truly didn’t get better than that. Except, actually their fried homemade bologna sandwich went absolutely crazy. As did their crepe. Which, I know how feral we all went for my babushka’s blinchiki (recipe here). So I’ll have to recreate their mapley brown butter ones too asap.
We also did the craziest horseback riding guided by a ex-veteran, who was blind, yet somehow guides the trail himself while being the biggest character I’ve ever met. It’s a super small operation, ran by himself, on his ranch and all of his acres of land. I need to go back already, miss my guy. Oh and all his horses are named after states!! You have to go.

Alright for now, back to the omelette. As soon as I got back from our trip, I went to the farmers market, got myself some shishitos and on the second try, it tasted just how I remembered it. Also, it totally inspired me to think outside how I usually eat shishitos. I always just think of them like an appetizer on their own, rather than an ingredient. But I love their flavor so much so I’ll start putting some respect on their name.
