Potato salad haters rise up!!! But now, sit back down. Because we can’t stay haters forever. It was time to give potat’ salad another chance.
So get this, a potato and a cucumber walk into the bar. And the cucumber asks “can I get something creamy and dill-icious” and the bartender says, “I’m all out of drinks but I got this dill pickle tzatziki potato salad!!!!!”

But as you have gotten by now, this is potato salads time for redemption.
DILL PICKLE TZATZIKI POTATO SALAD!!!!!!! Herby, zesty, briney, fresh and so. good.
This recipe didn’t come to me in a dream like they usually do. It came to me at my mom’s house. My sweet talented of a chef mom’s house!!!!!! She made boiled baby potatoes and tzatziki, not together, just both separately. And I mean, obviously I did what anyone else would do and I ate them together. A little dipski here a little dipski there.
And of course it was amazing, the Greeks have been on that shit forever. So I did what I had to do and ~americanized~ tzatziki and potatoes into a potato salad the very next week! Lucky you now you get to try it!
a cucumber + potato walk into a bar potato salad:
serves: about 8-10 as a side
4 lbs fingerling or baby potatoes, halved (I did a mix and loved the mix in shapes)
dill + chives to garnish
for the tzatziki:
4 mini/persian cucumbers
6 pickle spears, diced (or I guess like 2 full size pickles)
1 1/2 cups greek yogurt
1/2 cup creme fraiche or sour cream
2 tbsp olive oil
juice from 1 lemon (you can start with 1/2 and see from there, I like it extra lemony)
3 garlic cloves, grated
3 lil splashes of pickle brine
salt + pepper to taste (see note)
1/2 cup dill, finely chopped
1/3 cup mint leaves, finely chopped
for the tzatziki: grate the cucumbers on a box grater. persian cucumbers are veryyyy watery so squeeze the extra liquid out using your hands or in a paper towel. once you’ve squeezed all the juice out, add to a bowl with the rest of your ingredients and set aside to ~marinate~. taste for more pickle brine, salt + pepper and add accordingly. The brine also helps to thin out the tzatziki to a more “dressing” consistency.
wash your potatoes and put them in a LARGE pot topped up with cold water. I forgot to cut my potatoes before boiling them so I did it after, but if you want to cut down cooking time, cooling time and burning your hands don’t forget to do that! boil for around 10-15 ish minutes, until they’re perfectly fork tender but NOT mushy. keep an eye out girl!
***NOTE: potatoes need a ridiculous amount of salt to actually come through in taste. like add a literal HANDFUL into the water before boiling. Probably around 1/3 a cup lol. And then they’ll probably still need some. This is key to a flavorful potato base for your salad, we don’t want bland potatoes!!!
drain the potatoes and set aside to fully cool. drizzle with a healthy amount of olive oil to season those puppies up while they cool. I spread them out on a baking sheet in an even layer to speeden this up but you can prep this ahead of time as well (imagine that)
once fully cooled, add the tzatziki and give it a mixy mix!!!! I added about 3/4 of the tzatziki mixture because I didn’t want it TOO dressed up. This is totally dependent on your taste so follow your heart on this, but you won’t be mad with the leftover pickle tzatziki for sure. garnish with more herbs, flaky sea salt and a lemon cheek :’)
This recipe sits great all day, I know this because I made it at 12pm, we ate it at 4pm and then popped it in the fridge (no we didn’t, but you definitely should. we’re not dead though which is great) and came back to it for dinner at 9pm. It was the best. Unfortunately I can’t speak to how it held up the next day because it didn’t make it that far. But I think it should be good for an extra day!
