So we meet again, pasta salad. I mean the days are only getting hotter from here which means we will need new ways to inhale bowls of cold pasta from the comfort of our air conditioned homes. And if you’re lucky, you’ll eat it poolside (I will be leeching on to my friends pool all summer, of course)
Talking of leeches, I saw a TikTok the other day that was like “what’s one thing you thought would be a huge problem when you grew up, but actually turned out not to be at all” and the guy said leeches and that hit so hard for me, guys. Like I literally, wouldn’t even know where to find one if I tried today and it used to keep me up at night thinking how I would be covered in them after jumping into a body of water in the future. Anyway, glad that hasn’t presented as an issue. Let’s move on from that now. And let’s talk about, her <3
This amazing, gorgeous, delicious, fresh (+ vegetarian!!!! wut wut) pasta salad. Because one thing y’all been asking me for is a vegetarian recipe.
And while obviously, you can make any of my pasta salads sans meat, I would be lying if I said that would give you the full experience as intended. I have given substitutions in the past, like fried capers in lieu of crispy prosciutto. BUT it’s always nice when something is intentionally made for you :’) And this one was made for you.
