pan con tomate pasta salad
like eating a juicy, cold & salty tomato
y’allllllllllllllllllllllllll I got a pasta salad. it’s a gooooooood one. it’s pan con tomate inspired because when in summer lean into the tomato craze.
personally, there are few things as refreshing and delicious as a salted tomato on a hot ass day. this salad has all the right things going on - the dressing is drinkable, it’s bright and fresh and herby and it’s beautifully light for a hot day. which judging by this weekends forecast, is exactly what you’re gonna need. the crispy shallots add a fabulous umami and crunchy aspect. it’s just the perfect balance of everything while being a simple girl. it’s also so easy which, when it’s this hot out, is much needed.
feel free to omit the salami to make it vegetarian. if you still want a kick, toss in a tsp or so of calabrian chili paste into the dressing instead.
