not just a chicken salad

it's a rainbow chicken salad!!

Spring really has me all up in my herby, fresh, zingy feels. So the other day when I was craving a chicken salad, I thought about how I could ~springify~ it to be a little bit lighter + fresher than its original form.

No hate to chicken salad, it deserves all the mayo it desires, but she’s getting a bit of a refresh. I also coincidentally had a ton of veggies I needed to use up in my fridge so they got chopped up and thrown into a rainbow stack between 2 slices of fresh five grain bread. If this doesn’t screaming picnic sandwich I don’t know what does.
