hello my dears, how are we all doing in this imaginary time between thanksgiving and christmas?!
if you follow me on IG, you saw I just came back from Copenhagen. Volvo invited me on the most insane trip of my life, driving through Sweden and exploring the new XC90. Idk how or why they found me but I felt like I was living in an alternate universe the entire time.
I extended 2 days on my own (first solo “trip”!!) in Copenhagen and I have mixed thoughts on solo trips buuuuut it was literally only 2 days, and overall I loved the city so much and cannot wait to go back. But let me tell you Volvo knows how to wine and dineeeee. We got to have a 2 Michelin Star meal at Daniel Berlin’s restaurant Vyn, while also staying on the waterfront property in rural Sweden. Surreal. It was so peaceful and restorative after the sprint that was November. I’m going to get a mini guide of where I ate and etc soon. But since I am back home now, all I can think about is Christmas. I was so happy to be back with my tree - I tinseled it for the first time this year and I am obsessed.
Now I can imagine everyone is planning their Christmas menu’s, which I’ve linked an index of recipes to peruse through here if you need! But let me also offer you this comforting and warm pot pie. It’s giving a Cotswold Christmas, it’s giving holly, it’s giving wrap me up in a blanket and pass me bowl while I sit cozied up by the fireplace. If you’re hosting people at your house for the week, this would be such an amazing thing to make for your guests. It also reheats great to have in the fridge as people want to grab a little serving for themselves or in my case, eat as leftovers for 3 days.
