If you’ve been around for some time, you know I have beef with beans (#beefwithbeans) I leave them out of chili, I don’t add them to my Chipotle bowl, I just like - don’t really vibe with them. And most importantly they don’t vibe with me. Iykyk. So I really overlooked them for a while.
Until the other night, when I was making a soup for my sick boyfriend. Parmy broth, tuscan kale, leeks, fluffy lemon chicken meatballs, dill, and buttery parsnips. I didn’t want to overwhelm the soup with pasta shells, but there wasn’t enough sustenance to the soup otherwise. It was a problem only beans could fix. And for a no bean household, that’s a crazy thought to have.
So I rummaged my pantry and found a random jar of great northern beans. I don’t know how this contraband got into the house. But I cracked the can open, drained ‘em and threw them in my soup. I had immediate regret. I DON’T EVEN LIKE BEANS WHY DID I RUIN MY SOUPPP.
And then I plated the soup up, served it to my boyfriend apologizing for adding beans because the soup was going to be so good but then I had the dumb idea to add beans, something we both equally don’t like. And as he typically does, he talks me off my ledge and tells me to stop being a dramatic ass freak over beans. Valid….
So I tried the soup, picking up the baby lumachine pasta with beans. And I was…obsessed. I mean it was the perfect bite. Tender lil white bean, lil chicken meatball, and lil pasta shell. It’s reminiscent of an italian wedding soup but made lighter and brighter I would say.
So yeah this is currently my favorite soup. I stashed a few portions in my freezer (although I would suggest adding kale after thawing for a fresher bite) And I think once you try it, it will be yours too!!!
If you haven’t had a parsnip before, they are quite easy to find, they sell them at trader joes near the carrots. They’re a root veg part of the same family as le carrot, but the texture once softened is almost reminiscent of a potato. But sweeter. And earthier? Very good! It absorbs the broth and really doesn’t have a strong taste of it’s own, but a fabulous addition nonetheless.
