As much as I love a fat slice of chocolate cake - there’s nothing like a tart summer fruit dessert. But but BUT! I don’t really fw a warm fruit dessert. Strawberry galette - ehhhhh. Strawberry shortcake with macerated strawberries - YUUUHHH!!

And so a few weeks ago I had a slice of key lime pie from Steve’s Authentic Key Lime in Red Hook (you should go) and I was reminded how scrumdiliumpcious key lime pie is. We opted for a tiny hand pie between 4 people since we were coming off a day long food crawl, but we all agreed that the 1 bite per person actually ended up being perfect because key lime pie gets a bit bored after. Although, if we’re being real I obviously would’ve bodied an entire slice, especially from Steve’s.

And naturally, with summer creeping on, I wanted to make a pavlova because it’s one of my faves - my birthday cake last year was actually an eton mess inspired cake. Sooooooooooo with Steve’s key lime in my back pocket + my love for pavlova came…..

I asked everyone to guess how many key limes they think 1 cup of juice required, and the answer (although results will vary on your limes):

is 42 limes

It’s the key like graveyard ^^^ I know that sounds insane but they’re TINY! I squeezed 3 at a time in my handheld squeezer. I got the key limes from Whole Foods and 2 pre packaged bags was the perfect amount.

Anyway I really really really think you should try this because it’s sooooooooo good. While I ate 3 slices myself, it does make a pretty large pav so the evening I made this, my bf and I hit up everyone we know in the area and sent a bunch of slices off in Uber Connects lol. Rave reviews across the board if you wanted some validation!!
