I don’t know about you babe but summer has me hardddly wanting to cook. I want watermelon, a margarita, a dozen oysters and a fresh lil salad. So the less I have to cook, the BETTA.
Enter: dinner & lunch ~all at once~
It’s a recipe that makes a hot dinner, AND!!! an even better, easy fresh lunch the next day. No cooking or heating up required! And it kinda rhymes. Fun!
And before you’re like tHaT’s JusT lEFtOVers - ummm maybe?? But it’s intentional leftovers that actually taste like they were meant to be eaten this way. So not really!
I don’t know what it was about this meal that just HIT but this has officially become my go-to easy recipe of the summer.
Dinner SLAY:
1/2 package of orzo (about 8 oz)
2 cloves of garlic, minced
1/2 jalapeno, minced
juice + zest of 1/2 lemon
handful of dill, minced
a healthy amount of shredded parm
butter lettuce
sliced banana peppers or pepperoncinis
persian cucumbers
freshly grated black pepper + salt
boil orzo in salted water according to instructions and drain. return back to the pot and add the garlic, lemon, dill, jalapeno, and parm. mix + season with black pepper + salt. cover and set aside while you make the chicken.


Le Chicken:
1 lb boneless chicken thighs
zest + juice of 1/2 lemon
1/4 jalapeno, minced
olive oil to coat chicken
1-2 ish tbsp zaatar
1 tbsp tj’s dill pickle seasoning (omit if you don’t have but I love this spice for chicken)
1-2 tsp chile powder
salt + freshly cracked black pepper
Mix chicken with all the ingredients.
Cook thighs in a 425 F airfryer for about 12 minutes then broil for a few minutes until the outside is golden brown. Measure the internal temperature of the chicken to 165 F or just cut one open to make sure it’s not pink lol
Let rest for a few minutes then cut into bite sized pieces.
ASSEMBLY!!
add a few handfuls of butter lettuce to your plate, top with orzo, your chicken, sliced cucumbers, pepperoncinis and a dollop of the garlicky yogurt. garnish with more dill + voila - soooooo goooood!!!!
now fast forward to the next day……….it’s time for….
LUNCH SLAY:


I loved the addition of this garlic yogurt for the cold lunch version, but it would be bomb for the hot version too so feel free to do so!!
Garlicky Yogurt (1 serving):
1 garlic clove, grated
big squeeze of lemon juice
1 heaping tbsp greek yogurt
salt + pepper
mix your yogurt ingredients together and set aside.
add your lettuce to a bowl + top with your orzo/chicken. drizzle with olive oil and a splash of pepperoncini brine to ~revive~.
dollop a scoop of yogurt and top with cucumbers + more pepperoncinis! <3333333 so gooood
