hello pasta salad summer!!!
opening for the 2025 season of pasta salad summer we have this crispy artichoke lemon pasta salad!!!
& man do I love an artichoke - in all varieties really. I wasn’t introduced to them very early in life, rather than high school when my mom would buy the huge jar of marinated artichoke hearts from Costco. she’d throw them in my salads and suddenly, they piqued my interest. once I met Alex, I was welcomed into the world of steamed + roasted artichokes vs their dinner table. and from there, well now, I’m a slut for a steamed artichoke + aoili. my rendition here.
one of my favorite restaurants in hoboken (Antique Bar & Bakery) makes this crispy artichoke salad with grilled chicken, and it truly is just the best summer salad. after my 3rd time eating it I knew it’s destiny would be a pasta salad. so here she lies for you to enjoy - best enjoyed with grilled chicken on the side ofc.
if you watched my video making this, you’ll notice I changed a few things to improve the recipe - but just follow the instructions below on some things I changed! I only had butter beans at the time of filming but they were too beany and firm for one bite vs a cannelini which I prefer is more delicate and mellow. I also accidentally cilegine mozz which are the huge golf balls in the bowl. I visually prefer boccoccini but it doesn’t really matter taste wise. and lastly, I tried this with water and oil artichokes and oil worked best for frying and becoming crispy! okay that’s all for being inside my brain!
