I've been in the same dinner rotation for weeks and this inspired me to actually use those lentils I bought three months ago. Sometimes breaking a rut is less about discipline and more about just being bored enough to finally experment. This soup sounds perfect for that.
This was stellar, I love the layering of bok choy and lentils in this soup. Only question, in the beginning when cooking the chicken should it be seared in the pan with no liquid or oil?
Super lovely! Don’t swap red lentils for something else; their nutty sweetness comes out when they cook down. I added some smoked cinnamon, and it added a lot of depth!
