I’m feeling inspired! I’m feeling hopeful! I’m feeling fresh! I’m feeling like I want to eat a juicy ass steak marinated in pineapple over a creamy spicy avocado crema atop a crispy crunchy beautiful tortilla! So that we shall do!
When I was in Mexico City, there was a restaurant - or should I say a food stall, that served the most fresh, delectable tostadas. Some with chicken tinga, some with beef, some with crab and fish. But I just remember each bite being so addictive and well balanced. This is also my reminder I do owe you a CDMX food guide asap.
But anyway, I had to recreate them at home because it seemed easy enough. I say that because there are certain things you just need to not make at home lol. Like sorry you’re ramen is not coming out better than the little shop led by a man dedicating his life to making the best noodles. Same with al pastor - like am I gonna go buy 100 chiles and a trompo to prepare it in my little home? No, I’m gonna walk my ass to the taco experts and get myself a $3 taco.
However, a tostada is approachable and I think a fabulous thing to make at home. I’m quite literally very inspired to have a little dinner party centered around different tostadas this summer. That being said, you know how I feel about easy, minimal ingredient recipes - splurge on the finer things! And the finer thing here is your tortilla.
I am not a big fan of corn tortillas. I respect them, I eat them when a dish calls for them, but I’ll usually choose a flour tortilla over a corn one. Not until I tried Masienda corn tortillas. These areeeeee FIRE!!!!!!! Not spon, just passionate.
When fried, the flavors just intensified and you get the most fresh amazing taste from them. It’s funny because I actually asked my boyfriend to pick some corn tortillas for me from his trip to Whole Foods, thinking he was going to get just the most basic cheap option. And he came home with these all excited about finding me “the noiccceeee tortillas from the refrigeration section”. So shout out to him for eating that up and putting us on!
